Mustikkapiirakka Finnish Blueberry Pie

This Finnish blueberry pie is a delicious twist on the summer classic. Made with a fresh blueberry and vanilla topping over a rich pastry crust, this Finnish dessert is bursting with flavor.

Ingredients

Crust

  • ½ cup butter room temperature
  • ½ cup caster sugar
  • 1 large egg
  • ½ cup rye flour
  • ½ cup all-purpose flour
  • 1 tsp baking powder

Filling

  • 1 ⅔ cups fresh blueberries
  • 1 cup sour cream
  • 1 large egg
  • ¼ tsp cardamom
  • 1 tsp vanilla
  • 4 tbsp caster sugar

Instructions

  • Mix the crust ingredients by creaming the sugar and butter.
  • Mix in the egg then the flour.
  • Mix in the cardamom and baking powder.
  • Spray the baking tray with cooking spray so that it doesn’t stick.
  • Roll out the dough, then spread it over the baking tray.
  • Bake the crust for about 10 minutes.
  • Then remove the crust and spread the berries.
  • Mix the sour cream, egg, cardamom, vanilla, and sugar and pour over the berries.
  • Bake for a further 25 to 30 minutes.
  • Remove and allow it to cool before serving. It is best served at room temperature.
