Old Fashioned Vegetable & Beef Soup

A delicious and warming soup made of chunky vegetables mixed with beautifully tender beef.

Ingredients

  • 2 tbsp cooking oil
  • 1 lb beef stew meat cut into ½-inch chunks
  • 3 celery sticks sliced
  • 1 yellow onion chopped
  • 2 can chopped tomatoes
  • 2 large potatoes peeled and chopped
  • 2 carrots sliced
  • 3 ½ cups beef broth
  • 4 cups water
  • 2 bay leaves
  • 1 cup frozen sweetcorn
  • 2 tsp garlic powder
  • 1 cup frozen peas
  • 2 tsp hot pepper sauce

Instructions

  • In a large pot, warm cooking oil over medium-high heat
  • Add the beef chunks and sauté until brown all over. Set aside on a plate.
  • In a separate pan, add cooking oil and sauté celery and onion for ten minutes, or until golden
  • Add the cooked beef, chopped tomatoes, potatoes, carrots, beef broth, water, bay leaves, and garlic powder
  • Bring to a boil then reduce heat. Simmer uncovered for about an hour, or until beef is almost tender.
  • Add hot sauce, sweetcorn, and peas. Cover and simmer for 30 minutes, or until beef is fully tender. Serve and season.
